  • 1 cup cold unsalted butter
  • 1/4 cup ice water
  • 1 lb sweet potatoes
  • 5 tablespoons softened unsalted butter
  • 1 cup dark brown sugar
  • 3 large eggs
  • Spices: cinnamon, ginger, nutmeg, cloves
  • 1 1/4 cups evaporated milk
  • 1 tablespoon vanilla extract

Instructions

  1. Prepare sweet potatoes by peeling, cutting into chunks, and boiling until tender (approximately 20 minutes). Drain and mash until smooth.
  2. For the crust, combine flour, salt, and sugar in a bowl. Cut in cold butter until crumbly. Gradually add ice water and mix until dough forms. Roll out to fit your pie dish.
  3. Preheat oven to 350°F (175°C). In another bowl, blend softened butter and dark brown sugar. Add mashed sweet potatoes, eggs (one at a time), spices, salt, evaporated milk, and vanilla; mix well.
  4. Pour filling into prepared crust and smooth the top. Brush edges with egg wash made from one beaten egg mixed with milk.
  5. Bake for about 90 minutes or until set. Allow cooling before slicing.
