  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3/41 lb ground beef
  • 24 oz marinara sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 32 oz ricotta cheese
  • 2 eggs
  • 1 cup cooked spinach, drained and chopped
  • 1/4 cup mozzarella cheese
  • 1/4 cup shredded Parmesan
  • 1 box jumbo shells
  • 2 cups mozzarella cheese
  • Fresh parsley, for serving

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the jumbo shells according to package instructions; drain and set aside.
  3. In a skillet, heat olive oil over medium heat and sauté diced bell peppers until soft. Add ground beef and cook until browned. Stir in marinara sauce and seasonings; simmer briefly.
  4. In a bowl, mix ricotta, spinach, eggs, mozzarella, garlic powder, and salt until combined.
  5. Fill each pasta shell with the ricotta mixture and arrange them in a baking dish over a layer of meat sauce.
  6. Pour remaining sauce over the stuffed shells and cover with foil; bake for 20 minutes.
  7. Remove the foil, sprinkle with mozzarella cheese, increase oven temperature to 375°F (190°C), and bake for an additional 15 minutes.
  8. Garnish with fresh parsley before serving.
