  • 16 Dutch carrots (with tops trimmed)
  • 600 g regular carrots (peeled and cut into quarters)
  • 400 g canned chickpeas (drained)
  • 3 tbsp maple syrup
  • 2 tbsp sriracha
  • 1 cup plain yogurt
  • Spices: smoked paprika, garlic powder, onion powder
  • Olive oil

Instructions

  1. Preheat the oven to 200°C/425°F.
  2. Toss the carrots in maple syrup, sriracha, olive oil, salt, and pepper in a bowl. Spread them on a baking tray.
  3. Drain the chickpeas slightly and mix with olive oil, spices, and maple syrup. Place on another tray.
  4. Roast the chickpeas for 25 minutes and the carrots for approximately 30 minutes until caramelized.
  5. In a separate bowl, combine yogurt ingredients; let sit for at least 20 minutes.
  6. Plate yogurt sauce as a base, top with roasted carrots and chickpeas, then garnish with fresh herbs.
