  • 3 cups bread flour
  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 2 1/4 teaspoons instant yeast
  • 1 teaspoon pumpkin pie spice
  • 3/4 cup whole milk
  • 1 large egg + 1 egg yolk
  • 1/2 cup canned pumpkin
  • 2 packages pumpkin spice cream cheese spread
  • Vegetable oil for frying

Instructions

  1. In a stand mixer bowl, combine the flours, sugar, yeast, and spices. Mix well.
  2. In another bowl, whisk together milk, egg, egg yolk, pumpkin, and vanilla until smooth. Add to dry ingredients and mix until combined.
  3. Gradually incorporate softened butter until smooth; knead until elastic.
  4. Let rise in a greased bowl for about an hour until doubled.
  5. Roll out the dough and cut into shapes; let rest on parchment paper while heating oil.
  6. Fry doughnuts at 350°F (175°C) until golden brown on both sides.
  7. Fill cooled doughnuts with cream cheese mixture using a piping bag and roll in spiced sugar before serving.
