  • 1 small onion, finely diced
  • 1 qt vegetable or chicken stock
  • 1 cup pumpkin puree
  • 1 small bunch fresh thyme sprigs
  • 1 cup arborio rice
  • ½ cup white apple vinegar
  • 2 tbsp butter
  • ¾ cup freshly grated parmesan cheese

Instructions

  1. In a Dutch oven, cook diced turkey bacon over medium heat until crispy. Transfer to a paper towel-lined plate.
  2. Sauté onions in the rendered fat until soft. Heat stock in a separate saucepan.
  3. Add thyme, salt, and pepper to the onions, then stir in arborio rice and toast for one minute.
  4. Mix in white apple vinegar, then gradually add warm stock one ladle at a time until absorbed.
  5. Once creamy, stir in butter, honey, parmesan cheese, and top with crispy turkey bacon before serving.
