  • 1 1/2 cups rolled oats
  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, combine flour, oats, brown sugar, baking soda, and salt. Stir in the melted butter until crumbly.
  3. Press two-thirds of the mixture into the prepared baking dish to form the base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour the pumpkin filling over the crumble base and spread it evenly.
  6. Sprinkle the remaining crumble mixture on top; add chopped walnuts if desired.
  7. Bake for 30-35 minutes until golden brown and set in the center.
  8. Let cool completely before slicing into squares.
