  • 1/2 cup pumpkin puree
  • 1/4 cup + 1 tablespoon milk (room temperature)
  • 1/4 cup unsalted butter (melted and cooled)
  • 2 teaspoons pure vanilla extract
  • 1/2 cup granulated sugar (for topping)
  • 1/2 cup brown sugar (either light or dark)
  • 1/4 teaspoon ground cinnamon (for topping)
  • 1/3 cup pecans (chopped)
  • 1 1/2 cups hot water

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 2-quart casserole dish.
  2. In a mixing bowl, sift together all-purpose flour, whole wheat pastry flour, baking powder, granulated sugar, and spices.
  3. In another bowl, mix pumpkin puree, milk, melted butter, and vanilla until well combined.
  4. Gradually add the wet mixture to the dry mixture; stir gently until just combined.
  5. Pour the batter into the prepared dish and spread evenly.
  6. For the topping, mix granulated sugar, brown sugar, cinnamon, and chopped pecans; sprinkle over the batter.
  7. Carefully pour hot water over the topping without stirring.
  8. Bake for about 40 minutes until set in the center.
  9. Allow cooling slightly before serving.
