  • 1 cup canned pumpkin puree

  • 1 cup all purpose flour
  • 1 tsp baking soda

  • 1 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 8 oz cream cheese softened
  • 1/3 cup white sugar
  • 1/2 cup light brown sugar
  • 1/2 cup white sugar
  • 1/2 cup butter
  • 1/2 cup flour
  • 1 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/2 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix vegetable oil, sugar, and eggs until creamy. Add pumpkin puree and vanilla extract; blend well.
  3. In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and ginger. Gradually combine with the pumpkin mixture.
  4. For the cream cheese filling, beat softened cream cheese with sugar and vanilla until smooth.
  5. To make streusel topping, mix brown sugar, white sugar, butter, flour, cinnamon, ginger, cloves, nutmeg, and baking powder until crumbly.
  6. In a greased 9×13 inch pan, pour half of the pumpkin batter. Spread the cream cheese filling over it then top with remaining batter and streusel mixture.
  7. Bake for approximately 45 minutes or until a toothpick inserted in the center comes out clean.
