  • 2 sticks salted butter (227g, room temperature)
  • 1/2 cup granulated sugar (100g)
  • 2 cups all-purpose flour (250g)
  • 1 cup shelled pistachios (120g)
  • 4 oz dark chocolate (113g)

Instructions

  1. In a mixing bowl, soften the room-temperature butter with a wooden spoon.
  2. Add granulated sugar and mix until well combined.
  3. Gradually incorporate flour until the mixture resembles chunky breadcrumbs; use hands to form a smooth dough.
  4. Roughly chop pistachios, fold in 2/3 into the dough, and knead gently.
  5. Shape into a log, wrap in plastic wrap, and chill for at least one hour.
  6. Preheat oven to 340°F (170°C) and line a cookie sheet with parchment paper.
  7. Slice chilled dough into half-inch rounds and place on cookie sheet with space between each.
  8. Bake for 12-18 minutes until edges are golden brown; cool on the sheet for ten minutes.
  9. Melt dark chocolate in intervals in the microwave; dip each cookie halfway in chocolate and sprinkle with reserved pistachios.
