  • 3 medium Potatoes (peeled and diced)
  • 1 medium Onion (chopped)
  • 1 bell pepper (chopped)
  • 2 cloves Garlic (minced)
  • 1 cup Beef Broth (or chicken broth)
  • 1 cup Cheddar Cheese (shredded)
  • 1 tbsp Olive Oil (for cooking)
  • 1 tsp Paprika
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • Fresh Parsley (optional)

Instructions

  1. Prepare all ingredients by chopping vegetables and setting them aside.
  2. Heat olive oil in a skillet over medium heat, add diced potatoes, and cook for about 8-10 minutes until softened.
  3. Remove the potatoes from the skillet and set aside.
  4. In the same skillet, brown the ground beef until fully cooked; drain excess fat if necessary.
  5. Stir in onion, bell pepper, garlic, and seasonings; cook until vegetables are softened.
  6. Return potatoes to the skillet; add broth and simmer covered for about 5 minutes.
  7. Top with shredded cheese; cover until melted.
