Ingredients

Scale
  • 1 lb boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 pita breads
  • 1 cup plain Greek yogurt
  • 1/2 cup feta cheese, crumbled
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • Fresh parsley for garnish

Instructions

  1. Marinate the chicken by combining olive oil, oregano, garlic powder, salt, and pepper in a mixing bowl. Add chicken thighs and coat well. Let marinate for at least 30 minutes.
  2. Heat a skillet over medium-high heat and cook the marinated chicken for 5–7 minutes on each side until golden brown (internal temperature should reach 165°F/75°C). Once cooked, let rest before slicing.
  3. In another bowl, mix Greek yogurt, crumbled feta cheese, lemon juice, minced garlic, salt, and pepper until smooth to create the tzatziki sauce.
  4. To assemble the gyros, spread tzatziki on pita bread, top with sliced chicken and fresh veggies. Roll tightly and enjoy!
