  • 1 teaspoon active dry yeast
  • 1 tablespoon sugar
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1/4 cup ricotta cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 1 tablespoon fresh thyme

Instructions

  1. In a medium bowl, combine warm water, sugar, and yeast. Let it sit until frothy (about 5 minutes).
  2. In a large bowl, mix flour and salt; add the yeast mixture and olive oil. Stir until a dough forms.
  3. Knead dough on a floured surface for about 8-10 minutes until smooth. Place in an oiled bowl, cover with a towel, and let rise in a warm area for 1 to 1.5 hours or until doubled in size.
  4. Preheat oven to 475°F (245°C). While the oven heats, mix ricotta, mozzarella, Parmesan, lemon zest, and juice in a bowl.
  5. Roll out risen dough into about 12 inches in diameter. Transfer to parchment paper or pizza peel.
  6. Spread cheese mixture over the dough leaving space for the crust; sprinkle fresh thyme on top.
  7. Bake for 10-12 minutes until crust is golden and cheese is bubbly.
  8. Drizzle with olive oil and honey; let cool briefly before slicing.
