  • 1/2 cup granulated sugar (plus extra for topping)
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup creamy peanut butter (for filling)
  • 1/4 cup unsalted butter, softened (for filling)
  • 1 cup powdered sugar (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • 1–2 tablespoons milk (as needed for texture)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in the egg and vanilla until combined.
  4. In another bowl, whisk together flour, baking soda, and salt; gradually add to the wet mixture until a dough forms.
  5. Shape dough into ovals, place on the baking sheet, and press with a fork for a crosshatch pattern. Sprinkle lightly with extra sugar.
  6. Bake for 8–10 minutes until lightly golden; cool completely on a wire rack.
  7. For the filling, beat together additional peanut butter, softened butter, powdered sugar, and vanilla until creamy; adjust texture with milk as needed.
  8. Assemble by spreading filling between two cookies.
