  • 12 Tbs. mild chili powder
  • 2 lbs. ground beef (ground round or ground sirloin)
  • 1 medium yellow onion, diced
  • 4 oz. spaghetti or angel hair pasta, broken into thirds
  • 1 15 oz. can chili beans, undrained
  • 1 46 oz. can tomato juice
  • 1 Tbs. granulated sugar
  • 1 tsp. each kosher salt and pepper
  • Shredded cheddar cheese (for garnish)
  • Corn chips (for garnish)
  • Sour cream (optional)

Instructions

  1. In a large pot over medium heat, brown the ground beef, breaking it apart as it cooks.
  2. Add the diced onion and sauté until translucent.
  3. Stir in chili powder, salt, pepper, sugar, and undrained chili beans.
  4. Pour in tomato juice and bring to a boil.
  5. Add broken pasta and reduce heat to low; simmer for 10-15 minutes until pasta is cooked through.
  6. Serve hot with garnishes of shredded cheddar cheese, corn chips, and sour cream alongside warm cinnamon rolls.
