  • 1/2 cup pure maple syrup
  • 1/4 cup oil (vegetable, canola, or melted coconut)
  • 1 tsp. vanilla extract
  • 1 cup gluten-free all-purpose flour
  • 2 tsp. pumpkin pie spice
  • 3/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350ºF. Line a muffin tin with liners and lightly coat them with cooking spray.
  2. In a large bowl, whisk together pumpkin puree, eggs, maple syrup, oil, and vanilla until well combined.
  3. In another bowl, mix gluten-free flour, pumpkin pie spice, baking soda, and salt until no lumps remain.
  4. Gradually add the dry ingredients to the wet mixture; whisk until smooth. Gently fold in chocolate chips.
  5. Divide batter evenly into muffin cups and bake for 24-27 minutes or until a toothpick comes out mostly clean.
  6. Allow to cool in the pan for a few minutes before transferring to a wire rack.
