  • ¾ cup dark molasses
  • ½ cup unsalted butter
  • 2⅔ cup flour
  • 2 tsp ground ginger
  • 1½ tsp baking soda
  • 1½ tsp ground cinnamon
  • ½ tsp ground cloves
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • ½ cup brown sugar
  • ½ cup sour cream
  • ½ cup whole milk
  • 1 large egg
  • ½ cup powdered sugar
  • 12 tbsp fresh squeezed lemon juice (to taste)
  • ½ cup powdered sugar (for optional vanilla glaze)
  • 12 tbsp milk (for optional vanilla glaze)
  • ½ tsp vanilla extract (for optional vanilla glaze)

Instructions

  1. Preheat oven to 425°F and prepare a muffin tray with cooking spray.
  2. Melt butter with molasses in a microwave-safe bowl; set aside to cool.
  3. In a separate bowl, combine flour, ginger, baking soda, cinnamon, cloves, nutmeg, and salt.
  4. Mix brown sugar, sour cream, milk, and egg into the cooled molasses mixture.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Fill muffin cups to the top and sprinkle with coarse sugar if desired.
  7. Bake for 5 minutes at 425°F; then reduce heat to 350°F for an additional 11–14 minutes until a toothpick comes out clean.
  8. Cool in the pan briefly before transferring to a wire rack to cool completely.
  9. Prepare lemon glaze by mixing powdered sugar with lemon juice and drizzle over cooled muffins.
