  • 1 tbsp olive oil
  • 1 shallot
  • 4 garlic cloves
  • 1 can cherry tomatoes (14 oz)
  • 2 mozzarella balls
  • Fresh basil leaves
  • Grated Parmesan

Instructions

  1. Preheat oven to 400°F (200°C) if baking.
  2. Season chicken fillets with salt, black pepper, garlic powder, and sweet paprika.
  3. In a large ovenproof skillet, heat olive oil and butter over medium-high heat. Cook chicken for about 5 minutes per side until browned and cooked through. Remove and keep warm.
  4. In the same skillet, sauté minced garlic and chopped shallot until fragrant. Deglaze with apple vinegar, then add salt, pepper, dried basil, tomato paste, and chicken broth; bring to a boil.
  5. Stir in canned cherry tomatoes and simmer for about 5 minutes.
  6. Return chicken to skillet; top with chopped basil and mozzarella cubes. Sprinkle with black pepper and grated Parmesan; simmer or bake until cheese is melted.
