  • 1 lb ground turkey
  • 1 small sweet onion
  • 1 cup shredded carrots
  • 8 cups shredded cabbage
  • 3 tbsp soy sauce or tamari
  • ¼ cup chicken broth
  • 2 tablespoons olive oil (divided)
  • 3 garlic cloves (finely minced)
  • 1 teaspoon finely minced fresh ginger
  • 1 tablespoon rice vinegar
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon toasted sesame oil

Instructions

  1. In a large skillet over medium heat, heat 1 tablespoon olive oil. Add ground turkey and cook until nearly done (5–6 minutes).
  2. Push turkey aside and add the diced onion and remaining olive oil. Sauté for 3–4 minutes.
  3. Stir in shredded carrots, minced garlic, and ginger; cook for an additional 2 minutes.
  4. Pour in chicken broth, followed by cabbage, soy sauce or tamari, rice vinegar, salt, and pepper. Mix well and cover; reduce heat to medium-low for about 12–15 minutes until the cabbage is tender.
  5. Remove from heat and stir in toasted sesame oil before serving over cooked rice or cauliflower rice.
