  • 1 teaspoon olive oil (or avocado oil)
  • 3 1/2 cups vegetable broth
  • 1 jalapeno pepper (diced)
  • 1 cup corn (fresh, canned, or frozen)
  • 3/4 cup dried red lentils
  • 15 ounces tomato sauce
  • 1 red bell pepper (diced)
  • 3/4 cup salsa (mild or spicy)
  • 15 ounces black beans (drained & rinsed)
  • 15 ounces red beans (drained & rinsed)
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Optional: cayenne pepper
  • 1/2 cup light cream cheese (or dairy-free alternative)
  • Salt and pepper to taste
  • Crushed tortilla chips for garnish

Instructions

  1. Prep the Vegetables: Dice the onion and red bell pepper. Rinse and drain the black and red beans. Wash the lentils under cold water.
  2. Combine Ingredients: In your crockpot, add all prepared vegetables along with vegetable broth, corn, tomato sauce, salsa, lentils, spices, cream cheese, salt, and pepper. Stir to mix well.
  3. Cook: Cover and set your crockpot on low heat for about 6 hours until lentils are tender. Stir occasionally if possible.
  4. Serve: Taste for seasoning adjustments before ladling into bowls. Garnish with crushed tortilla chips.
