  • 1/2 cup diced celery

  • 1/4 cup sundried tomatoes
  • 3 garlic cloves (minced)
  • 6 to 8 cups chicken broth
  • 1 cup heavy whipping cream
  • Fresh spinach and grated Parmesan cheese for finishing

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add diced chicken and season with Italian seasoning, salt, and pepper. Cook until browned (about 4–5 minutes).
  2. Add carrots, celery, onions, sundried tomatoes, and garlic; sauté until vegetables are translucent (3–4 minutes).
  3. Sprinkle flour into the mixture and stir well.
  4. Gradually whisk in chicken broth while stirring continuously to avoid lumps.
  5. Bring to a boil; add pasta and another teaspoon of Italian seasoning. Cover and simmer for about 20 minutes until chicken is cooked through.
  6. Stir in heavy cream, spinach, and Parmesan cheese; simmer for an additional 5 minutes.
  7. Adjust seasoning to taste before serving.
