  • 1/2 lb sausage, crumbled

  • 8 oz farfalle pasta (bow tie)

Instructions

  1. Preheat oven to 400°F (200°C). Toss cubed butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for 25–30 minutes until tender.
  2. Cook farfalle pasta in a large pot of salted boiling water according to package instructions; drain.

  4. Stir roasted squash into the skillet, then add heavy cream and Parmesan cheese. Mix well and fold in spinach until wilted.
