  • 1 tsp black pepper
  • 3 sprigs of thyme (more for serving)
  • 1 cup orzo
  • 3 ears corn
  • 2 ½ cups chicken broth
  • 1 cup grated Parmesan
  • 1 tbsp lemon juice
  • 1 cup heavy cream
  • Chili flakes for serving (optional)

Instructions

  1. Season salmon fillets with salt, garlic powder, and Cajun seasoning.
  2. Sear salmon in olive oil and butter until cooked through; set aside.
  3. In the same skillet, cook minced garlic and chopped onion until soft.
  4. Stir in orzo and corn; toast for 1 minute.
  5. Add chicken broth, bring to boil, then simmer until orzo is nearly al dente.
  6. Stir in Parmesan, heavy cream, and lemon juice; return salmon to skillet and simmer briefly.
