  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cooked rice (white or brown)
  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • ½ cup red onion, diced
  • Extra cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Marinate the Steak: In a medium bowl, whisk together lime juice, olive oil, cilantro, garlic, cumin, chili powder, salt, and pepper. Add flank steak and coat well. Cover and refrigerate for at least 30 minutes.
