  • 1 Tbsp ghee or butter
  • 1/2 tsp fresh rosemary, minced
  • 1/2 tsp fresh parsley, minced
  • 1/4 tsp salt

Instructions

  1. Wash the carrots thoroughly and lay them flat on a cutting board.
  2. Use a vegetable peeler to peel thin ribbons from each carrot, rotating as needed until too thin to peel.
  3. Fill a saucepan with 1 inch of water and bring it to a boil. Place the carrot ribbons in a steamer basket over the boiling water, cover, and steam for about 3 minutes until crisp-tender.
  4. In a mixing bowl, combine ghee or butter with minced rosemary, parsley, and salt. Add the steamed carrot ribbons and toss gently to coat.
  5. Serve immediately while warm.
