  • 0.33 cup low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon ground ginger
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. Season chicken pieces with salt, pepper, and garlic powder.
  3. In a skillet, heat olive oil over medium-high heat and brown the chicken for about 4 minutes.
  4. Whisk together brown sugar, soy sauce, pineapple juice, rice vinegar, ginger, and cornstarch in a mixing bowl until smooth.
  5. Place the browned chicken in the baking dish, pour over the pineapple chunks and glaze, and stir gently to coat.
  6. Cover with foil and bake for 25–30 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  7. Remove the foil and bake for another 5–10 minutes for caramelization.
  8. Let rest for 5 minutes before serving.
