  • 1 3/4 cups all-purpose flour
  • 1 tablespoon pumpkin spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 (15 oz) can pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat your oven to 375°F. Line muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, mix pumpkin puree, sugars, eggs, vegetable oil, and vanilla until smooth. Gradually add dry ingredients until just combined.
  4. In another bowl, beat cream cheese with additional sugar and egg yolk until smooth.
  5. Fill muffin tins about 3/4 full with batter. Top each with about a tablespoon of the cream cheese mixture; swirl gently with a toothpick.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes before serving.
