- 1 tablespoon pumpkin spice
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 (15 oz) can pumpkin puree
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 8 oz cream cheese (room temperature)
- 1/4 cup granulated sugar (for topping)
- Preheat your oven to 375°F. Line muffin pan with paper baking cups.
- In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
- In a large bowl, mix pumpkin puree, sugars, eggs, vegetable oil, and vanilla until smooth. Gradually add dry ingredients until just combined.
- In another bowl, beat cream cheese with additional sugar and egg yolk until smooth.
- Fill muffin tins about 3/4 full with batter. Top each with about a tablespoon of the cream cheese mixture; swirl gently with a toothpick.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes before serving.
