  • 2 cups cherry or grape tomatoes
  • 1 red bell pepper, diced
  • 1/2 small red onion, diced
  • 3 cloves garlic, minced
  • 8 ounces feta cheese
  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 4 large eggs
  • 1 cup chopped baby spinach

Instructions

  1. Preheat the oven to 400 degrees F.
  2. In a baking dish or ramekins, layer the tomatoes, bell pepper, red onion, and garlic. Add feta cheese in the center and drizzle with olive oil.
  3. Sprinkle oregano over the mixture.
  4. Bake for 25 minutes until vegetables soften and feta is melted.
  5. Remove from oven and gently mix in spinach.
  6. Create wells and crack an egg into each well.
  7. Return to the oven and bake for another 10 minutes until eggs are set to your liking.
