  • 3 cups butternut squash (peeled, seeded, cubed)
  • 12 oz Brussels sprouts
  • 8 oz bow tie pasta
  • 12 oz cooked smoked sausage (such as Cajun or Andouille)
  • 5 cloves garlic (minced)
  • 2 tablespoons butter
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss butternut squash with olive oil, salt, and pepper; roast on a baking sheet for 25-30 minutes.
  3. Halve Brussels sprouts and toss with olive oil; add to the baking sheet halfway through roasting.
  4. Cook bow tie pasta according to package instructions; drain.
  5. In a skillet, melt butter and sauté minced garlic until fragrant; add sliced sausage until heated through.
  6. Combine roasted veggies and pasta with the sausage mixture; season with smoked paprika and fresh thyme.
