  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon fine salt
  • ½ cup (113 g) unsalted butter, at room temperature
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled and finely chopped
  • ¼ cup (50 g) granulated sugar for rolling
  • 1 teaspoon ground cinnamon for rolling

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cream of tartar, cinnamon, and salt.
  3. In another bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add egg and vanilla; mix until combined.
  5. Gradually add dry ingredients to the wet mixture; mix just until combined.
  6. Gently fold in chopped apples until evenly distributed.
  7. Prepare cinnamon sugar by mixing granulated sugar and cinnamon in a small bowl.
  8. Roll tablespoon-sized portions of dough into balls; coat each ball in cinnamon sugar.
  9. Place dough balls on the baking sheet, spaced 2 inches apart, and bake for 8–10 minutes until edges are golden.
  10. Cool on the baking sheet for a few minutes before transferring to a wire rack.
