  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F. Prepare a 9-inch square baking dish by greasing it and lining it with parchment paper.
  2. In a saucepan, boil fresh apple cider until reduced by half (about 5 minutes). Measure to ensure ¾ cup remains, then stir in diced cold butter until melted.
  3. In a bowl, whisk together eggs, sugars, olive oil, sour cream, baking powder, baking soda, spices, and salt.
  4. Gradually mix in the reduced cider mixture until combined.
  5. Fold in the flour gently until just mixed; avoid overmixing.
  6. Pour batter into the prepared dish and bake for 22-25 minutes or until golden brown and a toothpick comes out clean.
  7. Cool slightly before topping with melted butter and a cinnamon-sugar mixture.
