  • 3 tbsp granulated white sugar
  • 1 3/4 cups all-purpose flour
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated white sugar
  • 6 oz cream cheese, cold
  • 2 egg yolks, at room temperature
  • 2 tsp vanilla
  • 2 tbsp apple cider reduction
  • 1/4 cup granulated white sugar (for topping)
  • 1/4 tsp ground cinnamon (for topping)
  • 1/8 tsp ground nutmeg (for topping)
  • pinch ground allspice (for topping)
  • 12 tbsp salted butter, melted (for topping)

Instructions

  1. Prepare an apple cider reduction by simmering the apple cider in a saucepan until it thickens to about 1 cup.
  2. In a mixing bowl, beat cold cream cheese until smooth, then add granulated sugar, egg yolks, vanilla, and the cooled apple cider reduction. Mix until creamy.
  3. In another bowl, cream softened butter with light brown and granulated sugars until fluffy. Beat in egg yolks and vanilla.
  4. Whisk together flour, cinnamon, nutmeg, baking powder, baking soda, and salt in a separate bowl. Gradually mix dry ingredients into the wet mixture until just combined.
  5. Preheat oven to 350°F (175°C). Scoop dough onto a parchment-lined baking sheet and flatten slightly. Place about a teaspoon of cheesecake filling in the center of each cookie dough ball and fold edges over to seal.
  6. Bake for approximately 11 minutes or until edges are lightly golden.
  7. Brush warm cookies with melted butter and sprinkle with spiced sugar mixture immediately after baking.
